If you are following a strict gluten-free diet, your blood test results will not be valid. The North American Society For Pediatric Gastroenterology, Hepatology & Nutrition (NASPGHAN) recommends eating 2 servings of gluten daily for six to eight weeks prior to collecting your sample, which equals eating about 2 slices of bread made from wheat each day.
